The Bain-Marie Technique
For this recipe, I melted 10 Oz of Ghirardelli’s Dark Chocolate Flavored Melting Wafers using the bain-marie technique, which refers to the water bath or double boiler method used to melt ingredients for cooking. I highly recommend this technique for melting chocolate because it prevents cocoa butter and solids from splitting. The steps are easy to follow:
- First, boil water in a saucepan.
- Second, place a clean glass bowl over the simmering water. Put your chocolate chips in the bowl and stir with a spatula until they almost melt.
- Third, remove the bowl from the heat and place it on a trivet. Add half a teaspoon of coconut oil and stir until the chocolate melts.
- Dip your strawberries in the melted chocolate and immediately place them on a parchment-lined tray.
- Next, top your chocolate-covered strawberries with your favorite toppings. You may use crushed nuts, shaved chocolates, sprinkles, etc. You may also leave it as is. My favorite topping is swirls of chocolate to give it a cuter look!
- Finally, allow 15 to 20 minutes for the chocolate-covered strawberries to harden. The chocolate will be hard, but the strawberries will still be soft and juicy!
Easy Chocolate-Covered Strawberries
Ingredients
- 24 medium-sized strawberries (about 24 Oz, or 700 grams)
- 10 Oz Chocolate-flavored melting wafers – I use Ghirardelli's. (about 280 grams)
- Sprinkles, crushed nuts, or some melted chocolate for swirling.
Instructions
- Boil water in a saucepan. Meanwhile, rinse your strawberries and pat them to dry. The strawberries must be completely dry before dipping them in the chocolate.
- Place a clean glass bowl over the simmering water. Put your chocolate chips in the bowl and stir with a spatula until they almost melt.
- Remove the bowl from the heat and place it on a trivet. Add half a teaspoon of coconut oil and stir until the chocolate melts.
- Dip a strawberry in the melted chocolate and swirl it until evenly coated. Slowly lift the strawberry from the melted chocolate bowl, shake it gently to remove any excess, and place it on a parchment-lined tray. Continue with the remaining strawberries.
- Top your chocolate-covered strawberries with your favorite toppings. You may use crushed nuts, shaved chocolates, sprinkles, etc. You may also leave it as is. My favorite topping is swirls of chocolate to give it a cuter look!
- Allow 10 to 15 minutes for the chocolate-covered strawberries to harden. The chocolate will be hard, but the strawberries will still be soft and juicy!
- PS: Use the same technique to make white chocolate-covered strawberries, but you may need to work faster because white chocolate hardens more quickly than dark. Also, please see the notes below to make chocolate swirls.
