These Medjoul dates are stuffed with nuts, dipped in chocolate, then covered with yummy toppings for a double treat! They taste super moist, crunchy, and creamy at the same time. My gourmet stuffed dates recipe makes a decadent treat to serve during Ramadan, offer as a gift, or enjoy as a snack. They are all you need if you’re going for a walk, a hike, or looking for natural fuel for your body!
Medjool Dates
The date palm fruits are high in nutrients, antioxidants, and fiber. For this recipe, we need a specific type of date: the one and only Medjool! Native to Morocco, Medjool dates are notably richer, softer, and chewier! They have a caramel-like taste and make an excellent healthy snack.
Medjool dates are now grown in the warm regions of the United States. They are widely available and easily spotted; they have a smooth texture and look darker and larger than regular dates.
These yummy treats are super tasty on their own. However, to take it up a notch, stuff them with nuts and dip them in chocolate; YUM!
Chocolate in a Bain-Marie!
The main benefit of chocolate is producing feelings of happiness! Chocolate is also loaded with antioxidants, fiber, iron, magnesium, copper, potassium, zinc, and other minerals, making it highly nutritious and healthy.
For this recipe, I melted two cups of Nestle Toll House Milk Chocolate Morsels using the bain-marie technique, which refers to the water bath or double boiler method used to melt ingredients for cooking. I highly recommend this technique for melting chocolate because it prevents cocoa butter and solids from splitting. The steps are easy to follow:
- First, boil water in a saucepan.
- Second, place a clean bowl over the simmering water. Put your chocolate chips in the bowl and stir with a spatula until they almost melt.
- Third, remove the bowl from the heat and place it on a trivet. Add one teaspoon of coconut oil and stir until the chocolate melts.
- Dip your stuffed dates in the melted chocolate using a spoon and immediately place them on a parchment-lined tray.
- Next, top your chocolate-covered dates with your favorite toppings. You may use unsweetened shredded coconut, crushed walnuts, fried almonds, shaved chocolates, sprinkles, etc. You may also leave it as is; it’s up to you!
- Finally, place your tray in the refrigerator for at least one hour of cooling. The chocolate will harden, but the dates will still be soft and chewy!
Et Voilà! Your Stuffed Dates are Ready!
It’s common to split Medjool dates in Morocco, stuff them with walnuts, and enjoy them with a glass of milk. It’s an easy-to-reach snack served to welcome guests to your house. Because Medjool dates pack many calories in a small serving, you may want to limit your intake to one or two dates per day.
Easy Stuffed Dates
Ingredients
- 10 Medjool Dates
- 2 cups milk chocolate chips (you may also use semi-sweet or dark chocolate chips)
- 1 tsp coconut oil (you may use more until desired consistency)
Stuffing Options
- Walnuts halves
- Fried blanched almonds
Topping Options
- Walnuts (crushed or wholes)
- Fried blanched almonds (crushed, sliced, or wholes)
- Shredded unsweetened coconut flakes
- Shaved chocolate, sprinkles, etc.
Instructions
- Split the dates into halves lengthwise and remove the seeds.
- Stuff your dates with walnut halves and fried blanched almonds, or leave them as is.
- Close the dates back and set them aside.
- Melt the chocolate chips in a bain-marie or microwave. To use the bain-marie technique, please refer to the detailed steps above.
- Add coconut oil to smoothen the melted chocolate texture.
- Dip some of your stuffed dates in the melted chocolate using a spoon—next, place dates on a parchment-lined tray.
- Top your chocolate-covered dates with crushed nuts, shredded coconut flakes, or your favorite topping.
- Place your tray in the refrigerator for at least one hour before serving.
- Enjoy with a glass of milk, preferably almond milk!
Notes
- Store the leftover dates in the refrigerator.
