Stuffed Moroccan Msemmen makes a perfect brunch or dinner option. I love stuffing my Msemmen with ground beef, sautéed onions, bell peppers, olives, and a blend of spices. To make it vegan, skip the meat and follow my super-duper yummy filling ideas below!
Stuffed Moroccan Msemmen Variations
Ground Beef
I love using ground beef and simple spices as the main ingredients in stuffing Msemmens. If you’re like me, you will find that ground beef pairs perfectly with onions, bell peppers, and olives. You may even add some shredded cheese for a fun texture.
Veggie Blend
Msemmen tastes fantastic with veggies such as shredded carrots, zucchini, and spinach. When using veggies only, I like to add a tad of ginger and curcuma to bring out a sweet flavor.
Bell Pepper Cheese
I absolutely love this variation! sautée one diced onion and a blend of diced peppers of your liking (green, red, orange, yellow, or all of them!). Add 1 tsp salt and 1/2 tsp each: pepper, paprika, turmeric powder, and garlic powder. Turn off the heat and add one cup of shredded cheese (white cheddar, Mexican, or Italian blend). Perfection!
Olives and Sautéed Onions
One of my favorites is sautéed onions with salt, pepper, and paprika. Once I turn off the heat, I add olives and parsley. The taste is divine!

Stuffed Moroccan Msemmen
Ingredients
- 2 cups Double zero OR bread flour (Do NOT use All-Purpose flour)
- 2 cups Semolina flour
- 1 tsp salt
- 1 Tbsp dry active yeast
- 1 Tbsp granulated sugar
- 1 – 1/2 to 2 cups lukewarm water (42 degrees C)
Folding Ingredients
- 4 Tbsp melted unsalted butter
- 4 Tbsp olive oil
- 2 Tbsp Fine semolina
Ground Beef Filling
- 1 lb ground beef
- 1 Tbsp olive oil
- 1 small diced onion (yellow or white)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 2 Tbsp freshly chopped parsley
- 1/2 diced bell pepper (optional)
- 1/4 to 1/2 cup green olives (optional)
Instructions
Making the Beef Filling
- In a large pan, sauté the onions with the bell peppers over medium heat for a few minutes until translucent. Add the ground beef and all the spices. Brown the meat, drain it, then add freshly chopped parsley. Taste and adjust the seasonings accordingly. Remove from the heat and allow to cool down before stuffing the Msemmens.
Making the Dough
- Brush a large tray with olive oil and set it aside.
- Mix the sugar with dry yeast in a small bowl and add a few tablespoons of lukewarm water. Cover and let rest for 3-5 minutes to rise.
- In the bowl of a stand mixer, combine bread flour, semolina flour, and salt. Whisk until it's all combined. Add the Yeast mixture. Add the water gradually and Knead medium-high for 7-10 minutes using a dough hook. Your dough should be smooth, soft, and homogenous – If your dough is stiff or sticky, add water or flour one tablespoon at a time until desired texture.
- Rub your hands with olive and form a large ball with your dough. Rub your dough with more oil, cover it with a cling film, and let it rest for 15 minutes.
- Rub your hands with olive oil and divide the dough into small balls (size to taste). Transfer the balls to the prepared tray, cover them with a cling film, and let them rest for 15 minutes. Meanwhile, prepare the folding ingredients: melt five tablespoons of butter and mix it with five tablespoons of olive oil. Set them aside. Next, put 1/4 cup of fine or semolina flour in a separate bowl.
Folding and Stuffing the Msemmen
- Place the first dough ball on a generously greased working surface, and rub your hands with the olive oil and butter mixture. Gently flatten the ball to spread the dough from the center outward, forming a very thin circle. It also helps to flip your dough circle if you prefer to flatten it even more.
- Place the filling all over the flattened circle. Fold the dough into thirds to form a rectangle. Then, fold the rectangle into a square, adding more filling before closing the square.
- Place your square back in the oiled tray and cover it. Repeat with the remaining dough balls until you've got 12 squares in the tray. Cover and let your dough squares rest for an additional 15 minutes.
Cooking the Stuffed Msemmen
- Preheat a griddle, cast iron, or crepe skillet on medium heat for a few minutes. Oil your hands again and pat the first squared dough to flatten it. The thickness is up to your preferences, but if this is your first time making Msemmen, you may experiment with the first couple of Msemmens and adjust the thickness accordingly.
- Transfer the flattened square to the hot skillet and cook on each side for 1-3 minutes, turning it a few times until golden brown. Continue through the remaining dough squares; careful not to overcook, or the flatbread will be too dry.
- Serve Msemmen immediately or allow it to cool. Enjoy!

- Store your Msemmen in the fridge for up to 3 days or in the freezer for up to 2 months.
- Heat your Msemmen on a skillet over medium heat for a few minutes, filliping it a few times until the desired temperature.
