The Best Treat for All Occasions!

Nothing shows love more than truffles (and diamonds, of course! But let’s focus on the truffles for now!) I love making these delicious treats to celebrate our anniversary, Valentine’s Day, or offer as a special occasion treat! Because coconuts are available all year long, these coconut truffles also make a great treat during the holiday season.

Easy Coconut Truffles with 3 Ingredients Only!

These delicious coconut truffles are no-bake and easy to make. Here is all you need:

  • Unsweetened, finely shredded coconut flakes: because condensed milk is sweet, it’s best to use unsweetened coconut flakes for a more balanced flavor. If finely shredded coconut flakes aren’t available, you may shred the coconut flakes in a blender or food processor. Here is the one I use for all my baking recipes; it’s organic, gluten-free, and tastes fantastic!
  • Sweetened condensed milk: this ingredient is a must because it binds the coconut flakes together. Using too much, however, may make it hard to form the balls. On the other hand, not using enough will result in dry, hard-to-chew coconut truffles. Therefore, it’s important to use the right amount.
  • Honey-roasted almonds: while these gems are optional, they take the truffles to the next level. I use these honey-roasted almonds because they add a beautiful flavor and the right amount of crunch to the truffles. However, use the classic roasted almonds, hazelnuts, or peanuts. I’ve experimented with them all, and they all taste amazing!

Decorate, Refrigerate, and Enjoy!

What I love most about these truffles is you can customize them based on the occasion. I rolled them in coconut flakes in this recipe for a classy, elegant look. However, I’ve also dipped them in chocolate flakes, crushed nuts, and snowflake sprinkles to give them a holiday vibe! It’s so much fun to get creative with these!

Keep the coconut truffles refrigerated until they’re ready to be served. While these truffles keep well in the refrigerator for up to 2 weeks, allow them to thaw to room temperature before indulging (about 5 minutes). Enjoy!

Ingredients
  

  • 2 cups unsweetened, finely shredded coconut flakes (6 oz / 170 g)
  • 1 cup sweetened condensed milk (10 oz / 285 g)
  • 15 honey roasted almonds (optional)
  • Coconut flakes, crushed nuts, chocolate flakes, or sprinkles for dipping. (your personal preference)

Instructions
 

  • Combine the sweetened condensed milk and coconut flakes in a medium bowl and mix with your hands until it's all combined. (it will be a bit sticky, but that is totally normal). Cover and let the mixture rest for 10 minutes.
  • Using a cookie scoop and the palm of your hands, form bite-sized balls and stick an almond inside each ball. Reshape the ball until round and smooth, and set it aside.
  • Repeat this step until you've used all the coconut mixture. Rinse your hands with water between every 2-3 balls because it gets too sticky while forming the balls.
  • Once you've used all the mixture, rinse and dry your hands. Next, dip each ball in coconut flakes and put it in a parchment-lined tray. You may also dip your coconut truffles in crushed nuts, chocolate flakes, or sprinkles.
  • Refrigerate for 2 hours before serving. Enjoy!

Notes

  • Store the coconut truffles in the fridge for up to 2 weeks.
  • Allow the truffles to thaw for 5 minutes to room temperature before serving.
