Mango Fool

Say "aloha" to my favorite summer dessert: a refreshing mango fool topped with fresh berries and vanilla-flavored whipped cream! This easy no-bake mango fool makes a deliciously satisfying dessert to cool off during the warmer months. Think 50% fruits, 50% cream, and 100% perfection!

Equipment

  • 4 small dessert cups (glass, porcelain, or plastic).

Ingredients
  

Mango Puree

  • 2 ripe mangos (medium size)
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • Sugar to taste if mango is unsweet (totally optional)

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 Tbsp powdered sugar
  • 1 tsp vanilla extract

Toppings

  • Strawberry slices, raspberries, or blackberries. (optional)
  • lemon zest (optional)

Instructions
 

Mango Puree

  • Add all the mango puree ingredients to a blender and blend for 10-15 seconds or until the puree is homogenous.

Whipped Cream

  • Using an electric mixer, mix the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form (about 90 seconds).

Decorate

  • Scoop the mango puree and whipped cream into dessert cups, alternatively forming layers.
  • Add some sliced strawberries between layers if desired, and top your mango fool with more lemon zest and strawberry slices.
  • Refrigerate for 30-60 minutes or until chilled. Enjoy!
