Berry Salad
- 5 cups power greens (spinach, arugula, collard greens)
- 1 cup sliced strawberries
- 1/2 cup raspberries
- 1/2 cup blueberries
- 1/2 cup feta cheese
- 1/2 cup sliced almonds
- 1/2 cup sliced red onions
Raspberry Vinegraitte
- 1 cup raspberries
- 1/2 cup olive oil
- 1-1/2 Tbsp red wine vinegar (or lemon juice)
- 1 Tbsp Honey (optional: if the raspberries are too tangy rather than sweet, then honey helps balance the flavor)
- 1/4 tsp salt
- Freshly ground pepper (to taste)
Salad Instructions:
In a large bowl, use the washed power greens as the base of your salad.
Toss in washed sliced strawberries, blueberries, raspberries, chopped red onions, feta cheese, and sliced almonds.
Drizzle raspberry vinaigrette over the top or serve it on the side.
Raspberry Vinaigrette Instructions:
Put all the ingredients in a food processor and blend for 30-45 seconds.
Taste and adjust sweetness and saltiness by adding more honey or salt to your liking.
If the dressing is too thick for your taste, you may add more olive oil or vinegar/lemon juice. Blend until desired taste and consistency.
